Ingredients

1 scoop of Kika
1 cup pumpkin purée (not pumpkin pie filling)⁠
2 eggs⁠
¼ cup melted coconut oil (or olive oil)⁠
¼ cup maple syrup (or honey)⁠
1 tsp vanilla extract⁠

1½ cups all-purpose flour⁠
1 tsp baking soda⁠
½ tsp baking powder⁠
½ tsp salt⁠
1 ½ tsp pumpkin pie spice (or cinnamon + nutmeg)⁠
⅓ cup dark chocolate chips (plus a few extra for topping)⁠

Instructions

Preheat oven to 350°F and line a loaf pan with parchment paper. In a large bowl, whisk together pumpkin purée, eggs, oil, maple syrup, and vanilla until smooth. Add Kika, flour, baking soda, baking powder, salt, and spices. Stir until just combined — don’t overmix. Fold in chocolate chips, pour into the pan, and top with a few extra chips. Bake for 45–50 minutes, or until a toothpick comes out clean. Cool completely before slicing — it firms up as it cools.⁠
